I had these last night with a nice salad, very tasty. Leftovers for lunch today.
big slab of pork ribs, rind removed (make scratchings out of it), excess fat removed
cut into individual ribs, elave whole, cut into smaller multi-rib sections - choice is yours
smoke dust
garlic powder
Old Bay Seasoning
Marinate the ribs in the dry seasonings for at least 3 hours but better overnight
Cook in the oven on about 160-170ºC until tender and about 90% cooked
you could use an air fryer or cook them on the BBQ with in-direct heat if you want
Slather on either of the 2 glazes below
Continue to cook on a low/medium heat adding more glaze and turning meat over as required until ribs are completely cooked and falling off the bone but well covered in the glaze.
raspberry/strawberry/plum/cherry jam
redcurrant jam
apple cider vinegar
chopped pickled jalapenos
orange marmalade
apple cider vinegar
chopped pickled jalapenos
honey or maple syrup
For both glazes:
heat the jam/marmalade until warm and slightly liquid
add other ingredients to taste - 4 parts jam to 1 part vinegar is what I use as I don’t like things too sweet
stir well
spoon/brush over the meat for the last 10-30 minutes of cooking
