1 whole chicken ( 1 buy 3 for £10 at our local supermarket and freeze 2 for later cheapskate that I am) but chicken drumsticks or thighs (my favourite) both bone in and with skin or a combination of the 2 works well
plain flour
beaten eggs in a deep bowl - probably 3 large will do you
cornflakes - crushed, put them in a plastic bag and use a rolling pin is the easiest way
sesame seeds, toasted if you like them better
sea salt
cracked black pepper
dried thyme/sage/oregano/marjoram - whatever you like most to be honest but sage is best
2 plastic bags
Joint chicken into 8-10 pieces
Pat all pieces dry
mix sesame seeds into the bag of crushed corn flakes
mix sea salt, pepper and dried herbs into the flour and put into a plastic bag
pre-heat oven to a medium heat (or use a halogen oven/air fryer/Power XL oven like I do to save electric (cheapskate again)
put the chicken pieces into bag of flour and shake well to cover
put chicken pieces into the beaten egg and cover generously
put chicken into the bag with the cornflakes and shake to make sure the chicken is well covered
put on a baking tray and cook in the medium hot oven turning halfway - will take 20-40 mins depending on oven. Better to cook slower and longer than to rush it.
When done the chicken should be succulent and the coating crisp and going slightly brown on the edges.
Serve hot and fresh.
Eat with your hands and your favourite carb or a nice crisp salad with fresh bread (french stick is good) and a make-it-yourself sandwich at the table.
