fresh brocoli broken into small(ish) florets - or use a mix of brocoli and cauliflower
garlic, thinly sliced
ginger, cut into small matchsticks
red chillies, thinly sliced on the slant (seeds removed if you prefer more mild heat levels)
veg/peanut/olive oil/garlic infused oil/
chilli oil/sesame oil for wok frying
I normally cook this on a cast iron skillet in my Ooni oven or on a Cobb oven but in a wok or frying pan works well
get the skillet very hot
mix together all the ingredients and toss well in the veg/olive oil and make sure well coated
put in the skillet a small drizzle of chilli/sesame oil
throw everything into the hot skillet and shake
cook for a few minutes turning now and again - doesn’t matter if the edges of the brocoli or garlic burns as this adds to the taste and texture
When just starting to turn soft - you want it with crunch as soggy brocoli is disgusting - take the skillet to the table and let everyone help themselves
If you want a bit more taste drizzle on some oyster sauce, toasted sesame oil and sprinkle with sesame seeds (toasted if you like).
Goes well with steak or a Thai inspired whole fish cooked on charcoal/Cobb oven or on a skillet in the Ooni
