Honey mustard root vegetables
Had this a few times recently for a change
Was getting bored of cooking vegetables the same way over and over even though I love mashed swede with lots of butter and pepper with roasted meats but a change is needed now and again.
We had this served with thick slices of a roasted gammon joint with crispy skin.
We use an air fryer but use whatever oven you have.
Note to any American readers out there - swede is known as purple top rutabaga in the USA and is not just cattle food but very tasty (well it is to me), nutritious, filling and versatile.
assorted root vegetables of your choice (but not potatoes) peeled then cut into either bite-size pieces, chips or shoestring fries:
swede
carrots
celeriac
butternut squash
parsnip
vegetable or olive oil
sea salt
ground black pepper
runny honey
wholegrain mustard
Pre-heat air fryer/oven to 180℃
Toss the vegetables in a small amount of the oil
Add a grind of the sea salt and black pepper to taste
Cook for about 30 mins stirring now and again until vegetables are going soft and starting to colour on the outside and corners
Add a good drizzle of runny honey and a big dollop of wholegrain mustard
Stir well
Continue to cook stirring now and again for about another 15 mins until vegetables are cooked and have a nice colour with some charring.
Enjoy with roasted meat of your choice

Just a note about oils. Do not use "vegetable oils" (seed oils) as they are carcinogenic and cause plaque to form in the arteries. The only oils we should be using are coconut oil and olive oil, along with butter.
