Sweet chilli salmon
Or chicken or pork if you prefer
Was looking through the freezer and store cupboards to see what was getting close to throwaway date or getting freezer burned and found almost a complete side of salmon we had forgotten about so next problem: what to do with it as getting bored with the same over and over.
A quick root through the store cupboard and came up with this in the air fryer but under the grill or in the oven will work.
I think it will also work well on skinless chicken breast or a nice pork steak or fillet or even on a piece of firm fleshed fish as well - cod, haddock, hake, monkfish etc
thick piece of salmon, skin on but scales removed
sea salt
crushed black pepper
your choice of oil - peanut, sunflower, vegetable or olive oil
ground ginger (but ground coriander, ground turmeric or garam masala would work)
pre-made sweet chilli sauce
lime juice
red chilli - finely sliced into threads
green chilli - finely sliced into threads
garlic cloves - finely sliced
fresh ginger - cut into match stick sized pieces
spring onions - finely chopped
tin foil - doubled over
Pre-heat the air fryer to 190-200ºC
Place the tin foil on the cooking tray and fold up at the edges
Lightly oil the foil
If using skin-on fish cut through the skin down to the flesh below a few times
Place the salmon (or whatever you are using) on the tin foil skin side down
Lightly oil the salmon then season with the sea salt and black pepper
Sprinkle the ground ginger over the salmon and rub in so it sticks and is evenly coating the salmon all over
Put in the air fryer for 5 mins or so
While salmon is cooking mix together the sweet chilli sauce and lime juice - taste to make sure is is tart but not wrinkle removing sour.
Add in a little more sweet chilli sauce or even honey or maple syrup if you over do it with the lime juice
Add the garlic, ginger and half the red and green chillies to the sauce mix
When salmon is just starting to take a colour pour the sauce mix evenly over the salmon and make sure it’s covered all over
Sprinkle half the spring onions over the salmon
Put back in the air fryer for another 10-15 mins until cooked and taking a nice colour on the sauce spooning any sauce that collects in the tin foil back over the salmon
Put on warmed plates and sprinkle over the remaining spring onions and chilli threads
Serve with your favourite steamed or stir-fried vegetables with any sauce from the tin foil spooned over the top so nothing goes to waste. A little white rice sets it all off nicely.
